Vegetable Pakora

Deep fried, crispy vegetable pakora, full of flavour using Khanum Spices and Gram flour. Why not try these with some of our Khanum Chutneys?  

A perfect treat after a long day.

 

Ingredients:

 

120g Khanum Gram Flour

1 tsp Khanum Garlic & Ginger paste

½ tsp Khanum Garam Masala

½ tsp Khanum Carom Seeds (Ajwain)

60g Rice Flour

½ tsp Salt

3 Green Chilli

2 tbsp Chopped Mint leaves

1 Medium carrot

90g Bell pepper

90g Cabbage

1 Medium Onion

6 French Beans

30g Spinach

 

Method:

  1. Prep the veg, wash, and cut into long thin strips.
  2. Add the vegetables in a bowl with the Khanum Garlic and Ginger paste, Green chillies, Salt, Khanum Garam Masala and Mint. Mix well and squeeze gentle to release moisture. Keep to one side for 10 minutes.
  3. Add the Khanum Gram Flour, rice flour and Khanum Carom Seeds to the bowl. Mix well until there is a sticky dough. If the mixture is too dry add a few tbsp of water.
  4. Heat oil in a deep pan on a medium heat. Test the oil by putting a small amount of the dough in the pan, it needs to sizzle but not brown. This is when the oil is ready for the pakoras.
  5. Take a small portion of the dough and flatten around 1-2 inches in size. Gently slide the dough into the oil.
  6. Lower the heat to medium and do not touch the pakoras for 1-2 minutes. Once they have firmed up a little stir them and fry until golden. Batch cook these do not overload the pan.
  7. Remove the pakoras and leave them on a cooling rack. Cook the next batch of Pakoras.
  8. Once all the mixture has been used and the pakoras have drained the excess oil serve them in a dish alongside some Khanum chutneys.
