Aloo Palak (Serves 3)

Ingredients:

 

1 tsp Khanum Cumin

½ tsp Khanum Garam Masala

1 Medium Onion chopped.

3 Cloves of Garlic crushed.

3 Medium Potatoes

200g Spinach

Cooking Oil

 

Prep:

  1. Pluck the spinach leaves and roughly chop. Wash the spinach (Drain and wash a few times) Leave to drain for 10 minutes to remove any water from the leaves.
  2. Peel your potatoes and cube them (approx. ¾ inch) Add them to a bowl of water and keep them to one side.
  3. Peel and roughly dice your onion. Peel and crush the Garlic cloves and leave to one side.

 

Method:

 

  1. Heat a drizzle of oil in a nonstick pan. Add your Garlic & Khanum Cumin powder to the pan. Cook for 1-2 mins. You can also add some fresh chilli sliced as an option.
  2. Add onions to the pan and cook until softened.
  3. Drain the potatoes and add to the pan. Stir and cook for 3- 4 mins. Pour 4 tbsp of water and mix well.
  4. Cover the pan with a lid and leave to cook until the potatoes are cooked. The potatoes should be soft enough for a fork to go through but not mushy.
  5. Sprinkle a pinch of salt for seasoning & Garam Masala. Sauté for 2-3 mins.
  6. Add the spinach and stir fry on a high flame for 3-4 mins.
  7. Mix well and serve.
